Ingredients:
Lobia/ black eyed beans – 125 gms,( washed and soaked for 3 hrs,
Amaranth greens – 75 gms,( leaves picked, washed well, chopped fine and keep it aside,
Salt,
Oil – 2 tablesp,
Green chilli – 2, each cut into 2,
Onion – 1 medium, cut into small pieces,
Haldi – 2 pinch,
Red chilli powder – 1/2 tsp,
Dhania powder – 1 tablesp,
Jeera – 1/4 tsp,
Peeled and crushed garlic cloves – 4,
Mustard seeds – 1/4 tsp,
Urad dal and chana dal – each 1/4 tsp,
Curry leaves – few
Chopped Coriander leaves – 1 tsp
Red chilli – 2, each broken into 2,
Method:
1).Boil beans in pressure cooker with just enough water and little salt for 3 whistles. Drain them and keep it aside.
2).Heat oil in a kadai add mustard seeds, jeera, red chilli, crushed garlic, dals, curry leaves and fry them till mustard crackles and dals change colour.
3).Now add green chilli, onion, fry till onion becomes soft. Add dhania powder, haldi, red chilli powder. Cook for few seconds. Add chopped amaranth ,cover the kadai, cook for 2 minutes till greens become soft. Now add boiled lobiya, mix, cook for a minute.
4).Stir well so that beans are nicely mixed with greens. Add a pinch of salt if necessary. Sprinkle chopped coriander, mix once and remove from flame.
5).You can serve this nutritious dish with plain rice/ side dish for chapathi/ poori or any roti. You can enjoy it as it is, as a snack. In that case you reduce the quantity of greens if you desire.
