This kur kure bhendi is almost like a snack. It is an easy and quick recipe. Best side dish for sambar rice and other rice preparations.
Ingredients:
Tender bhendi/ okra – 300 gms,
Salt,
Oil to deep fry,
Red chilli powder – 1/2 tsp,
Haldi – 1/8 tsp,
Maggi magic masala – 1/2 tsp, ( or garam masala ),
Ginger garlic paste – 1/4 tsp,
Besan – 6 tablesp,
Suji – 1 Tablesp,
Corn flour – 2 tablesp, ( or rice flour ),
Jeera – 2 pinch,
Haldi – 1/8 tsp,
Dhania powder – 1 tsp,
Finely chopped coriander leaves – 1 tablesp,
Curry leaves – few.
Method:
1).Wash bhendi and wipe dry with a cloth. Cut both the ends and slice them each vertically into 4 parts.If bhendi are long cut them into two parts and slice them. Keep them aside.
2).Take a mixing bowl, add chilli powder, salt, haldi, Maggi masala powder, jeera, dhania powder, ginger garlic paste,chopped coriander leaves and mix well.
3).Now add bhendi pieces and gently smear the masala powders over them. Keep it aside. Mix besan, suji, corn flour very well. Dust these powder mix over the bhendi pieces and mix gently and thoroughly so that each and every bhendi is lightly coated with flours. Spprinkle 1 tablesp of hot oil , few drops of water and prepare into a slightly wet dough.
4).Heat oil and drop coated bhendi into hot oil and fry under medium low flame till light golden in colour. Remove them on to a kitchen tissue to absorb excess oil if any. Fry few curry leaves also and add them to fried bhendi to give them extra flavour.
5).Serve these crispy and crunchy snack as side dish for rice preparations.
Tip:
a).You can just through few cashew bits into dough and prepare. Tastes great.
b).Donot add too much of water to prepare the dough.
