Simple and quick dosakaya ( yellow cucumber ) curry

This curry with yellow cucumber ( Guntur dosakaya ) is very easy and quick to prepare, using minimum ingredients.This humble vegetable has many medical benefits like hydrating the body as it is said that it contains about 96 % of water.It provides vitamins, minerals and aids in regulating blood sugar levels.This is one of the best recipe for diabetics andm dieters.
Ingredients:
Fresh and firm yellow cucumber – 350 to 400 gms,,Wash, peel and check flesh and seeds for any bitterness. Discard if there is bitterness.Cut it into 1 inch cubes .Donot discard seeds if they are ok.keep it aside with cubes.The seeds are crunchy and healthy.
Onion – 2, medium, sliced fine,
Green chilli – 2, chopped fine,
Peeled and crushed garlic cloves – 5,( optional),
Red chilli powder – 3/4 tsp,
Haldi – 2 pinch,
Salt,
Oil – 2 tablesp,
Method:
1).Mix all the ingredients in a kadai along with 2to 3 tablesp of water and cook under low flame covered with a lid. Stir after 3 minutes. Check if necessary, again add 1 or 2 tablesp of water and continue cooking.
2).Stir once or twice to check whether the cucumber has turned tender and glossy. The curry ( we call it Iguru in Telugu ) with it`s thick gravy is mildly tangy and tasty. The entire cooking process takes within 15 minutes under low to medium flame. Serve this curry with hot plain rice. There is no need to have extra dal recipe also.
Tip:
1).This is a regular curry ( and my favourite too) in my mothers house during my childhood. In Andhra region many curries are prepared as Iguru. The advantage is that they can be prepared quickly with little oil and simple ingredients. We can use the same method for other vegetables like brinjal, tomato, ridge gourd , drum sticks, potato etc. Almost all the vegetables can be used.
2).If you want to have little masala flavour, first you can fry the onions along with chilli and little ginger garlic paste, before adding the vegetables.
3).My simple touch of masala is ,when the curry is ready, add a course powder of dry fried dhania seeds and garlic cloves and cook for another minute and remove.
