Cluster bean is a bit neglected vegetable though it is fibre rich, iron rich, with lot of minerals,vitamins with many health benefits. Here iam giving a recipe varugulu or vadium , can be relished after deep frying. Usually we prefer to use tender vegetables especially cluster beans . We do not prefer the hard ones with seeds for preparing curry. If they are not tender and full of seeds we need not throw them. We can prepare varugulu. They can be fried and used as an accompaniment in meals for rice preparations. This recipe requires only 2 ingredients and some spice powder to sprinkle over them.
Ingredients:
Hard cluster beans ( not tender and not dried ) – 250gms, ( Actually tender beans are used as vegetable, the hard ones with seeds are used to prepare varugulu and dried beans are used for seed collection).
Salt,
Vellulli karam or chat masala for sprinkling over the fried vadium or varugulu.
Method:
1).Wash and trim the ends of beans. Add salt and boil them till they are just tender.
2).Drain and put them under sun for 2 to 3 days.There should not be any moisture.
3).Fry them in hot oil under low medium flame. You have to remove them quickly. Spread them on a plate and sprinkle vellulli karam or chat masala.Serve them as accompaniment for rice preparations.You can munch them as it is, as a snack.Best diabetic recipe.
Tip:
a).As the hard beans contain lot of fibre, it is said that some people may have digetion problem. Actually we consume varugulu in very small quantities as an accompanement, hence there may not be any problem. Try not to use them if they are hard and mature.
