Arbi/ chama gadda( in Telugu ) taro/ colocasia is a root vegetable.It is rich in fiber and antioxidants . It contains low fat and minerals there by helps in maintaining blood pressure levels and heart health.
Ingredients:
Arbi/ colocasia/ chama gadda – 3 medium size,washed thoroughly, boiled, peeled and mashed,
Onion – 1,medium, chopped fine,
Green chilli – 2,chopped fine,
Black pepper powder – 2 pinch,optional,
Salt,
Dehusked split moong dal – 3 table sp,( washed and soaked for an hour ),
Garam masala – 1/8 tsp,,
Milk – 1 Tablesp,
Haldi – 2 pinch,
Ginger garlic paste – 1/4 tsp,
Oil to make Omelette,
Chopped coriander – 1 Tablesp,
Besan – 1 to 2 Tablesp,
Method:
1).Drain moong dal and grind it with mashed arbi into fine paste and remove into a bowl.
2).Add besan, salt, garam masala, ginger garlic paste, haldi, pepper powder (if using) and blend well with a fork or whisker. Add milk and mix well,
3).Adjust milk if necessary to make the batter pourable like dosa.
4).Heat a non stick tawa, pour a laddle full of batter.Sprinkle onion, chilli, and coriander. Cook till it turns light brown on under side. Turn it and cook till other side also fried well.
5).Prepare omelettes using the remaining batter.
6).Serve this yummy vegetarian Omelette using arbi as a snack/ side dish.
Tip:
As it is a root vegetable it is not advisable for diabetics. But occasionally they can have small servings. You can check my other preparations using arbi – like crispy chips, pulusu, arbi fry etc in my recipe list if you desire.
