This chutney is prepared with very healthy spinach greens.This wonderful greens are very easy to grow in our kitchen garden.The plants require minimum water to grow with lovely green colour thick stems and leaves.The disadvantage is after plucking the leaves you have to immediately use them as the leaves are very delicate. The leaves along with tender stems can be used to prepare a variety of dishes like spinach dal, chutney, pakoda/ fritters etc.You can check my other recipes with this in my recipe list.
Ingredients:
Spinach leaves along with tender stalks – 150gms,
Red chilli – 8 to 10,
Peeled and crushed garlic cloves – 6,
Jeera – 1 tsp+ 1/4 tsp,
Dhania seeds – 1 Tablesp,
Salt,
Oil – 2 Tablesp,
Onion – 1 medium, sliced fine,
Tamarind paste – 1/2 Tsp,
Tomato – 1 medium sliced fine,
Curry leaves – few,
Chopped coriander leaves – 1 Tablesp,
Channa dal – 1 tablesp,
Mustard seeds – 1/4 tsp,
Hing – 2 pinch.
Method:
1).Wash greens, pick leaves and chop them fine along with stalks.Keep them aside.
2).Heat 1tablesp.oil, add 1 tsp jeera, dhania seeds, channa dal, fry till dal changes colour.Add red chilli and fry for few seconds.Now add 1/2 quantity of onion and fry till onion becomes soft.
3).Add tomato pieces and cook till it is mushy.Add greens and cook till they become soft and changes colour.
4).Cool the contents and grind in blender into fine paste along with tamarind paste,garlic and salt.
5).Remove the chutney into a bowl.Prepare tadka with mustard seeds, 1 red chilli, remaining jeera, curry leaves, hing and onions. Satue for few seconds and pour this over prepared chutney. Sprinkle chopped coriander and mix well.
6).Serve this yummy chutney with hot plain rice/ even any rice prepations / Break fast items.
7).It is a healthy chutney with lot of medicinal benefits. Best side dish for diabetics.
