This beans curry is a bit sweetish and liked mostly by kids.These beans are fibre rich and have many health benefits.
Ingredients:
Cluster beans – 300 Gms,washed and cut into 1/2to 1inch pieces after removing the ends and the fibrous part.
Onion – 1 medium, sliced fine,
Green chilli – 2,cut into small pieces,(omit if this curry is served for children ),
Red chilli powder – 1/2 tsp,
Haldi – 1/4 tsp,
Salt,
Oil – 2 tablesp,
Mustard seeds – 1/4 tsp,
Urad dal – 1/4 tsp,
Channa dal – 1 tsp,
Jeera – 1/4 tsp,
Dhania powder – 1 Tablesp,
Peeled and crushed garlic – 5 to 6,
Curry leaves – a sprig,
Chopped coriander leaves – 1 Tablesp,
Red chilli – 1 broken into bits,
Jaggery – 1 Tablesp,
Method:
1).Heat oil in cooker ( preferably 2/3 litres ) add mustard seeds, jeera, dals,red chilli, garlic, curry leaves one by one , fry for a minute till the mustard splutters and dals change colour.
2).Now add onion, green chilli and fry till onion turns soft.Add red chilli powder,dhania powder, haldi and beans.Stir well and add 150 ml. Water.Stir again once and close the lid. Pressure cook for 3 whistles under medium flame.
3).When the cooker cools, remove the lid and check the moisture in the curry.If it is there stir and allow to cook for another 2 to 3 minutes after adding jaggery. Sprinkle chopped coriander leaves.
4).Serve this curry as side dish for rice preparations / chapathi/ poori.
5).As variation you can avoid adding jaggery and sprinkle pappodi – (this recipe preparation is in my recipe list,You can check if you desire).
Tip:
a).Instantly you can prepare this pappodi by grinding roasted channa dal,jeera, and garlic cloves in a blender.This is a best side dish for diabetics ,of course with out jaggery.
b).The above mentioned is a quick method in cooker.If you want, you can make it in 2 steps- first boiling the beans and adding tadka later.
