Arbi chips are very easy to prepare. They are more tasteir than potato chips. But a little patience is needed in peeling the unboiled arbi. The chips are very crispy and can be served as snack as well as side dish .
Ingredients:
Arbi/ chama dumpa – 300 Gms,( wash them properly to remove dirt etc,pat them with a cloth or tissue. You need not remove any inner white part. Scrape the outer layer by putting little pressure on the peel. After peeling, wash them quickly once and allow them to little dry),
Salt,
Red chilli powder – 1 tsp,
Haldi – 1/4 tsp,
Roasted jeera powder – 1/8 tsp,
Oil to deep fry,
Methodwith:
1).After removing the peel, cut all the arbi into thin chips with the help of a chips cutter. Do not put them in water.Heat oil and fry the chips in batches ,till they become light golden in colour.Remove them on to a kitchen tissue.
2).Mix the masala powders in a container, put chips and toss them well so that all the chips are evenly coated with masala powders.
3).You can serve them as snack/ side dish for rice preparations just like potato chips.
Tips:
a).After washing the arbi pat them dry and peel.Otherwise it will be difficult to remove the peel as they are sticky.Even after washing the peeled arbi, allow them to dry or pat with a cloth.
b).While cutting into chips they appear to stick together, but no worry, while frying them ,they become separate.
c).Do not put the chips in water as we do with potato chips.
d).Masala I used here is very simple. You can use different masalas as per your preference.
e).Try to get bigger size arbi.
