Chiroti – A sweet dessert

Chiroti /pheni is a crispy, crunchy and juicy sweet, liked by one and all. It is very easy to prepare with minimum ingredients.
Ingredients:
All purpose flour – 250 Gms,
Chiroti rawa – 50 Gms,
Salt – a pinch,
Desi ghee – 5 to 6 Tablesp,
Sugar – 1 and 1/2 cups,(approximately 400 Gms),
Elachi powder – 1/2 Tsp,
Juice of half lemon,
Slivers of badam / pisthachio ( optional ),
Oil to fry,
Method:
1).Mix white flour, chiroti rawa, a pinch of salt with 2 Tablesp hot ghee. Blend very well by rubbing ghee with flours using hand. Add water little by little and prepare a little firm dough.Keep it aside for 15 minutes. Smear little ghee and cover wth damp cloth.
2).Mix sugar with 1 cup water. Prepare sugar syrup till it reaches just one string consistancy.Add 1tsp of juice of half lemon.Mix 1/4 tsp of elachi powder. Keep it aside.
3).Mix 3 Tablesp of corn flour with remaining ghee and prepare thick paste.Keep it aside.
4).Knead the prepared dough lightly and prepare a thin large chapathi.Smear the corn flour paste over the chapathi.sprinkle some rice flour or corn flour and smear lightly.
5).Start folding the chapathi tightly and smear little water to the other edge to close the log. Gently roll it with both hands so that the log will have uniform thickness. Cut the roll into 1 inch pieces. Press the cut portion lightly with hand and prepare a round with belan. Prepare all pieces into rounds.
6).Fry the pieces under low medium flame till they turn light golden in colour. Drop them immediately into warm sugar syrup. Remove them after 1/2 minute and arrange them on a plate to cool.
7).Serve them warm / cool and preserve them in an air tight container. Garnish with course nut powder if you desire.
Tip:
Gently press the flattened pieces to make rounds. Other wise the layers will not come out clearly.
