This eggless cake is very simple and easy to make with easily available ingredients in our kitchen.
Ingredients:
Suji/ semolina – 1 cup (150 Gms),
Desiccated coconut powder – 3 Tablesp,
Sugar – 1/2 cup + 2 Tablesp,
Fresh curd – 1/2 cup,
Oil – 1/3 cup,( without any flavour ),
Baking powder – 1 Tsp,
Baking soda – 1/4 Tsp,
Tutti frutti – 2 Tablesp,( mix some flour with tutti frutti so that they will not settle at the bottom of the cake while baking ).
Slivers of almonds / cashew bits 2 Tsp, raisins – 1 Tsp,(optional),
Vanilla essence – 1/4 Tsp,
Milk – 1/2 cup and as required, (boiled and cooled milk ),
Measuring cup,
Method:
1).Grease a round 6 inch baking mould lined with oil and keep it ready.You can place a baking paper if you desire.
2).Preheat Air fryer at 200 degree C for 5to 6 minutes.
3).Grind the suji into a fine rawa in a blender.
4).Add curd, sugar,oil and blend well . Add coconut powder and run the mixie once .Remove the batter into a mixing bowl.
5).Add 1/4 cup milk and mix well with whisker. Cover and let it rest for 1/2 hr.
6).After 1/2 hr batter looks thick as rawa absorbs liquids quickly. Now add the remaining milk little by little to bring it to cake batter consistency.
7).Add tutti frutti, baking powder, baking soda,Vanilla essence and blend the batter by cut and fold method with whisker.
8).Pour the batter into greased mould and sprinkle the slivers of almonds,raisins and cashew bits over the batter. (Use some tutti frutti over the batter if nuts are not available).Tap the mould twice to remove any trapped air bubbles. Arrange it in Air fryer basket and bake at 180 degree C for 25 to 30 minutes. Check the cake with a knife and if necessary continue to bake for another 5 to 10 minutes.
9).Cover with a clean towel and let it cool completely. When it is cool cut the cake and serve.
Tip:
Always mix the batter in one direction by cut and fold method only.
