Like potato arbi is also a favorite vegetable for children. Usually preparations with arbi are easy and require minimum ingredients.This preparation, arbi fry is very tasty and delicious.
Ingredients:
Arbi/ chama gadda ( in Telugu )/taro/ colocacia – 250 Gms,
Rice flour – 3 Tablesp,
Besan – 1 Tablesp,
Salt
Jeera – 1/4 Tsp,
Red chilli powder - 1/2 TSP,
Haldi - 1/8 Tsp,
Garam masala / chat masala - 1/4Tsp,
Dhania powder - 1/2 TSP,
Black pepper powder - 2 pinch,
Oil - 3 Tabesp,
Onion - 1,medium, sliced fine,( optional ),
Curry leaves chopped - few,
Peeled and crushed garlic cloves - 3,
Method:
1).Wash the arbi and cook them in cooker with water for 2 whistles. After the steam escapes,remove the arbi and peel the skin. Cut them into two ( into 4 if big ) and keep them aside.
2).Iake a bowl and put all the masala powders,rice flour besan, along with salt and mix well.
3).Heat oil in a non stick pan,fry the onion,garlic, jeera and curry leaves. Fry for a minute till onion becomes soft. Add the arbi pieces and fry till they become little brownish.
4)Sprinkle the masala powders over the arbi pieces. Mix well till all the pieces are well coated with the masala. Fry arbi under low flame till they become crispy and golden brown.
5).Serve this delicious arbi as side dish for sambar rice/ curd rice/ or as it is as a snack.
