Karnataka Maddur Vada

This vada is a famous snack recipe of a village by name Maddur in Karnataka region, in between Bengaluru and Mysore.It is a all time crispy snack served best as evening snack with a cup of tea.It requires very simple ingredients available in our kichen.It is prepared with semolina / suji,rice flour and all purpose flour with simple spices. There are lot of variations regarding quantities of suji, flours and spices.But onion and suji are important ingredients in preparing this crispy vada.
Ingredients:
Fine semolina / suji – 3/4 cup,
Rice flour – 1/2 cup,
All purpose flour – 3 Tablesp,
Salt,
Desi ghee – 1 TSP,
Hot oil for dough – 2 Tablesp,
Onion – 1, sliced fine,
Green chilli – 2, chopped fine,
Chilli powder – 1/8 Tsp,
Peanuts – 1 Tablesp, dry fried,peeled and lightly crushed ,
Chopped curry leaves – 2 Tsp,
Chopped coriander leaves – 2 TSP,
Chopped ginger – 1/2Tsp,
Oil to deep fry,
Method:
1).Take onion in a mixing bowl along with the spices except suji and flour.Mix well and add suji and other flours along with crushed peanuts.
2).Drizzle hot oil over the mix along with ghee. Mix once with a fork or spoon and now by using hand, mix all the ingredients very well. Usually the moisture in the onions is sufficient to bind the flours. But little water is also needed to form soft but firm dough.
3).There should not be any delay in preparing vada as suji will lose its course quality if it is allowed to rest.
4).Prepare thin round vada on a greased banana leaf or polythene paper and fry them under low medium heat till they turn light golden in colour.Remove them on a kitchen tissue to absorb oil if any.
Tip:
a).Some people prefer to fry twice to get more crispy vada. I prefer to fry once only as the vada are already thin.
b).You can use white sesame seeds.
