This egg curry is very easy to prepare with minimum ingredients, can be served as best side dish for roti and rice preparations.
Ingredients:
Eggs – 6to 7,boiled,peeled, halved into two and kept aside,
Onion – 3 medium, chop roughly into large pieces,
Green chilli – 3, each slit into two,
Jeera – 1/2 TSP,
Salt,
Red chilli powder – 3/4 TSP,
Haldi – 1/8 Tsp,
Oil – 3 Tablesp,
Dhania powder – 1 Tablesp,
Ginger garlic paste – 3/4 TSP,
Chopped coriander – 1 Tablesp,
Curry leaves – few,
Cloves – 3,
Cinnamon – 2 small pieces
Method:
1).Heat 2 tsps of oil, fry onion,chilli,jeera till they lightly change colour.Grind in a blender to a fine paste and keep aside.
2).Add a TSP of oil and fry egg halves till light brown.Remove.
3).Heat remaining oil in the same pan,add cloves, cinnamon, curry leaves and fry for a second.Add ground onion , ginger garlic paste and fry till nice aroma appears.Add haldi, chilli powder, dhania powder, salt and cook for few seconds. Finally add eggs. Mix gently, sprinkle few drops of water, close with lid and allow to cook for 30 seconds.
4).Sprinkle coriander leaves and mix gently. Serve this delicious gravy curry with hot rotis/ rice preparations.
Tip:
You can add a tablesp.of tomato puree after frying onion paste.
