This protein rich tasty Vada is prepared with lobia/ black eyed beans/ alasandalu ( Telugu name )with very healthy greens called ponnaganti koora ( Telugu )also called water amaranth/ alternanthera sessilis in english.These leaves are rich in vitamins and lot of various medicinal benefits.
Ingredients:
White lobia/ black eyed beans – 200gms,( washed and soaked for 3hrs ),
Onions – 2 medium, sliced fine,
Green chilli – 4,
Ginger grated – 1/2 TSP,
Curry leaves – 2 TSP,chopped fine,
Salt,
Jeera – 1/4 TSP,
Sounf – A pinch ( optional ),
Ponnaganti koora – 4 Tablesp,( cleaned, washed and chopped fine ),
Haldi – A pinch,
Chopped coriander leaves – 1 TSP,
Method:
1).In a blender grind the beens into a slightly course paste adding very little water.Keep it aside.
2).Grind ginger, chilli and salt.Add this paste to ground beens.
3).Add onion,sounf, jeera, haldi,chopped curry leaves and coriander leaves.Mix well and check salt.
4).Make round thin Vada and deep fry in medium low heat till crisp and light golden in colour.Remove on to a kitchen tissue to absorb oil if any.
5).Serve these healthy, tasty and crispy Vada as evening snack with tea.
Tip:
If you prefer Vada tobe soft inside make little thicker ones.
