Coconut drops

Coconut drops is a sweet dessert prepared with minimum ingredients. This famous sweet is very popular in Jamaica. It is very easy to prepare and tastes delicious. It is usually prepared with brown sugar or coconut sugar. Here I have made miner changes to give an Indian touch.
Ingredients:
Fresh coconut – 1, flesh chopped into tiny pieces,(approx. 2 cups,heaped )(measuring cup),
Jaggary powder – 2 cups,( heaped),
Cinnamon powder – 1/4 Tsp,
Cardamom powder – 1/4 Tsp,
Salt – A pinch,
Water – 2 and 1/2 cups,
Ghee – 1 Tsp,
Method:
1).Heat water in a non stick kadai with a pinch of salt and add coconut when it starts boiling.
2).Add jaggary powder, ghee, cinnamon and elachi powders .Cook the coconut jaggary mixture under low medium flame.
3).Continue cooking along with continuous stirring till the syrup becomes thick and sticky. Put few drops of syrup in a plate of water and check the consistency.
4).Quickly drop spoon fulls on a greased baking sheet. The process should be fast. Within few minutes the drops become a little hard. ( syrup should not run/ spread away from coconut drop).
5).As the dessert is little sticky you can put the baking sheet in fridge to make them a little hard.
Tip:
a). You can wrap the pieces in a individual fancy papers to avoid sticking to each other. b).You can lightly sprinkle khus khus on coconut drops immeadiatly after putting them on sheet Which gives them an attractive look.
