Aloo/ potato – 3 medium,
Onion – 2 medium, sliced fine,
Green chilli – 2 chopped fine,
Ginger – 1/4″ piece, chopped fine,
Oil – 1 Tsp,
Chopped coriander leaves – 1/2 Tablesp,
Curry leaves – 5to 6,
Mustard seeds – 2 pinch,
Haldi – A pinch,
Split urad dal – 1/4 Tsp,
Jeera – A pinch,
1).Wash potato and give 1 or 2 deep cuts on them. Arrange them on turn table along with a small cup with little water. Microwave them high for 3 minutes, check and again micro high for another 3 minutes.Check, if necessary continue for another minute. Remove the potato and allow them to cool. Peel and mash them, keep it aside.
2).Spread onion, chilli pieces, ginger on a micro safe plate. Mix little salt and haldi, micro high onion for 2 minutes. Remove the plate.
3).Mix onion with mashed potato. Keep it aside.
4).Prepare tadka on stove with mustard seeds, jeera, urad Dal, curry leaves. Add prepared aloo to tadka. Mix well and keep the Kadai for 1/2 to 1 minute under low flame with cover. Lastly sprinkle chopped coriander and remove.
5).Serve this curry with dosa/ chapathi/ poori/ stuffing for aloo bonda.
