Chayote/ Chow chow/ Bengaluru vankaya chutney

This delicious chutney is prepared with chayote/ chow chow/ Bengaluru vankaya ( in Telugu ). This vegetable contains lot of health benefits as it contains essential vitamins and minerals.
Ingredients:
Tender chayote – 2 medium size chayote, peeled and cut into 1″ pieces, (approximately 250 gms),
Onion – 1 medium cut into slices,
Green chilli – 6 to 8,
Jeera – 1/2 Tsp,
Garlic cloves – 4 Peeled,
Channa Dal – 1Tablesp,
Dhania seeds – 1Tablesp,
Salt,
Oil – 1 and 1/2 tablesp,
Tamarind paste – 1/2 Tsp,
Red chilli – 1,
Split white urad dal – 1/4 Tsp,
Mustard seeds – 1/4 Tsp,
Curry leaves – Few,
Chopped coriander leaves – 1 Tablesp,
Tomato – 2, medium, cut into pieces,
White til – 1 Tablesp,
Method:
1).Dry fry Channa Dal, dhania seeds, jeera and lastly til, till the dal changes colour and til starts spluttering. Make course powder in mixie and keep it aside.
2).Add 2 tsp of oil to pan, add green chilli and 1/2 onion. Fry till onion turns soft. Now add chayote pieces and tomato along with salt. Cover and Cook under low heat till pieces turn soft.
3).Remove the contents into mixie/ blender ( with masala powder ) , add tamarind paste, garlic cloves and grind into course paste.
4).Heat remaining oil, add mustard seeds, urad dal, red chilli , curry leaves, fry till dal changes colour. Add remaining onion, fry for a second and Pour this tadka over the chtuney.
5).Sprinkle chopped coriander leaves and gently mix. Check salt. Serve as side dish with hot plain rice with little desi ghee/ curd rice.
Tip:
You can serve it with break fast items like dosa/ idli/ rotis etc.
