This curry with fibre rich cluster beans can quickly be prepared in pressure cooker. Best served as side dish for rice preparations/ chapathi/ poori etc.
Ingredients:
Tender cluster beans – 200 Gms,
Onion – 1 medium, sliced fine,
Green chilli – 2, chopped fine,
Red chilli powder – 1/2 Tsp,
Haldi – A pinch,
Dhania powder 1 Tsp,
Garam masala – 1/4 Tsp,
Eggs – 2 or 3,
Ginger garlic paste – 1/4 Tsp,
Salt,
Oil – 3 Tablesp,
Jeera – 1/4 Tsp,
Curry leaves – A sprig,
Chopped coriander leaves – 1Tablesp.
Method:
1).Wash, pick cluster beans and cut them into 1/2″ pieces, ( remove ends while cutting).
2).Heat oil in pressure cooker, add jeera, curry leaves fry for a second . Add onion, chilli pieces and fry till onion becomes pink and soft.
3)Add ginger garlic paste, fry till raw smell goes. Add dhania powder, chilli powder, haldi and garam masala. Fry for 1/2 minute.
4).Add beans, salt and 150 ml. Of water. Mix well and pressure cook for 3 whistles.
5).Allow steam to escape and remove lid. If there is still any moisture, let the cooker be on fire for few seconds ( under low flamto make the curry dry.
6).Now break the eggs over the curry. Stir quickly and continuously so that the bean pieces are well coated with egg. Sprinkle coriander and mix once.
