Tasty and healthy amla rice

Amla or gooseberry fruit is loaded with lot of health benefits. It is used not only for pickles, but also used to prepare jam, murabba, juices, in mukhawas, amla rice etc.
Ingredients:
Cooked rice – 3 Cups,
Healthy and firm amla – 10, washed, grated and kept aside,
Salt,
Oil – 3 Tablespoons,
Mustard seeds – 1/4 Tsp,
Urad dal – 1Tsp,
Channa Dal – 1Tablesp,
Jeera – 1/4 Tsp,
Curry leaves – few,
Chopped coriander – 1 Tablesp,
Hing – A pinch,
Haldi – 1/8 Tsp,
Cashew nuts bits – 1Tablesp,
Grated ginger – 1/2 Tsp,
Onion – 1 Small sliced fine ( optional),
Green chilli – 4, each sliced vertically into four,
Red chilli – 2,
Method:
1).Rice should be nicely coked and fluffy.Drizzle a tablesp. Of oil over rice and mix well. Keep it aside.
2).Heat a tsp of oil in a Kadai or wok, add cashew nuts, fry till light brown. Remove. In the same pan add remaining oil add hing, haldi,mustard seeds, jeera, dals, red chilli and curry leaves. Fry till dals change colour.
3).Add green chilli, ginger, onion if using and grated amla along with salt. Fry for 1/2 minute and add this tadka to rice. Mix well so that all ingredients are combined well.
4).Check salt and sprinkle chopped coriander and cashew. Mix well and serve with any raitha.
Tip:
You can add a tablespoon of ( dry fried and powdered ) white til powderfor variation.
