This chutney is prepared within 15 minutes in a cooker. This tangy sauce like chutney can be served with chapathi, poori, dosa like breakfast items and also plain rice along with a spoon of desi ghee.
Ingredients:
Brinjal (any variety) – 150 Gms,
Tomato – 2, medium size,
Green chilli – 6,
Onion – 2, medium size,
Peeled garlic cloves – 5 or 6,
Salt,
Oil – 2 Tablespoons, ( or less),
Jeera – 1/4 Tsp,
Red chilli – 1, broken into 2 pieces,
Curry leaves – few,
Chopped coriander – 1 Tablespoon,
Peanut powder – 2 Tablespoons, ( peanuts dry fried,skin peeled and powdered),
Hing – A pinch, ( optional),
Haldi – 1/8 Tsp,
Tamarind paste – 1/2 Tsp,
Mustard seeds – 1/8 Tsp,
Method:
1).Wash all the vegetables. Cut the brinjal into large chunks. Keep them in salted water,
2).Cut each onion into four pieces, Cut each tomato also into 4 pieces,
3).Put all the ingredients ( except oil, mustard seeds, curry leaves, jeera and red chilli ) into a pressure cooker along with 200 ml of water and pressure cook for 2 whistles.
4).When the cooker is cool, open it and lightly mash the vegetable mix with a laddle.Add tamarind paste and peanut powder. Mix well.
5).Prepare tadka with hing, mustard seeds, red chilli, jeera and curry leaves. Pour this over mashed vegetable mix and let it be on fire for 2 minutes. Garnish with coriander leaves and remove.
Tip:
If you want it more spicy add little red chilli powder in the 3rd step.
