This is very tasty sambar with dosakaya/ yellow cucumber which is readily available in Andhra area. Lot of recipes can be prepared with this vegetable. You can check my other recipes with this vegetable in my blog.
Ingredients:
Yellow cucumber – 300 Gms,
Toor Dal – 200 Gms,
Red chilli powder – 1Tsp,
Green chilli – 2, cut lengthwise,
Haldi – 1/8 Tsp,
Hing – a pinch,
Onion – 2, medium, one sliced fine and second one is cut into 4 pieces
Tomato – 2, medium, chopped fine,
Sambar powder – 1Tablesp,
Mustard seeds – 1/2 Tsp,
Jeera – 2 pinches,
Red chilli – 2, broken into 2 pieces,
Curry leaves – Few,
Chopped coriander leaves – 1 Tablesp,
Peeled garlic cloves – 6,
Tamarind paste – 1 Tablesp,
Oil – 2 Tablesp,
Ghee – 1Tsp,
Salt,
Method
:
1).Wash cucumber, peel and cut into 1 to 2″ cubes. Keep them aside.
2).Wash dal and put it in pressure cooker. Add haldi chilli powder, tomato, onion ( which is cut into 4 ) and 400 ml water.
3).Pressure cook the Dal for 3 whistles. Let the cooker cool. Mash the Dal roughly with back of a laddle. Add the tamarind paste along with 150ml of water.
4).Heat oil in a Kadai ,add hing,mustard seeds, red chilli pieces, garlic and curry leaves. Fry till the seeds crackle. Add onion slices and fry till they turn pink. Add cucumber with salt and cook covered till the vegetable just becomes soft.
5).Put the cooker on flame again and pour the tadka with cucumber into the mashed dal. Add sambar powder and let it boil for 2 to 3 minutes. Pour the ghee over the dal.
6).Mix once and sprinkle coriander leaves. Remove from flame.
7).Serve with idli/ urad dal vada/ upma/ plain rice etc.
