Ragi rotte

Nachini flour/ finger millet flour/ ragi pindi ( in telugu ) is one of the calcium and Protein rich millets with antioxident properties. It is gluten free with lot of health benefits and many recipes can be prepared using this flour. Ragi sangati/ ragi ball is a most popular recipe in South India specially advised for diabetics.
Ingredients:
Finger millet flour/ nachini flour/ ragi flour( telugu ) – 250 Gms,
Salt
Onion – 1, medium, chopped very fine,
Green chilli – 2, chopped very fine,
Grated ginger – 1/4 Tsp,
Peeled and chopped garlic cloves – 2,
Chopped coriander leaves – 1 Tablesp,
Jeera – 1/4 Tsp,
Chopped curry leaves – 1 Tsp,
Grated carrot/ cabbage – 1 Tablesp,( optional ),
Oil – 2 to 3 Tablesp or less,
Method:
1).Take nachini flour in a mixing bowl. Add salt, all other ingredients except oil and onion. Mix well.
2).Add a tablesp of oil and onion. Prepare a medium tight dough using hot water. Keep it aside for 20 minutes.
3).using oiled hands make 4 balls out of the dough. Initially pat the ball into small patti and make thin round using belan.
4).Cook the rotte on a non-stick tawa under medium flame. Drizzle few drops of oil and see that both sides are baked well. Serve hot with any chutney or raitha.
