Super quick Yummy Apple jam

Usually preparation of jam takes lot of time and tests our patience.Here iam preparing this yummy jam quickly in a pressure cooker.
Healthy firm apples with theood colour – 1 kg,( approximately 5 to 6 medium size apples ),
Sugar – 200Gms ,
Desi ghee – 1 Tablesp,( optional ),
Vanilla essence – 1/4 Tsp,( optional ),
Citric acid – 1 Tsp,
Sodium benzoate – A pinch as preservative,:
1).Wash, peel and cut apples into 1 to 2″ cubes after removing the fibrous central part along with seeds.
2).put them in cooker ( preferably 3 litres cooker ) with 2 Tablesp of water. Pressure cook them for 2 whistles under low medium flame. Let the cooker cool.
3).Once the cooker is cooled remove the lid and mash the apple pieces into a paste with a masher or wooden laddle.
4).Add sugar, ghee and cook the pulp slowly under low flame till the liquidy paste becomes thick and lumpy. Add citric acid and mix well. Let it be on low flame for a minute or two. Lastly add a pinch of sodium benzoate, mix well and remove.
5).Serve this mouth watering sweet and tangy jam as bread spread or as topping on some deserts and snacks.
To check whether jam is ready and cooking process is complete ,put a bigdrop of jam in a plate.Even with tilting the plate if the jam does not môve you can say that jam is ready.
