This is one of the snacks prepared with urad dal, channa dal and healthy ponnaganti aaku. This green leafy vegetable is called by many names as ponnanganni, winter amaranth , dwarf copper leaf ( in English ) etc. We call it ponnaganti koora in Telugu. This is very rich in fibre, beta carotine, vitamines etc. Vada prepared with these greens is very healthy and nutritious. They are .crispy outside and little soft inside.
Ingredients:
Urad dal with out skin – 100 Gms,
Channa dal – 30 Gms,
Rice flour – 3 Tablesp,
Salt,
Onion – 1, medium, chopped fine,
Green chilli 3, chopped fine,
Ginger – 1/4″, chopped fine,
Dhania seeds – 1/2 Tablesp,( crushed roughly ),
Jeera – 1/4 Tsp,
Sounf – A pinch,
Ponnaganti greens – 1 cup ( measuring cup ),( pick,wash and chop them fine )
Garam masala – 1/4 Tsp,
Chopped coriander leaves – 1/2 Tablesp,
Chopped curry leaves – 1 Tsp,
Oil to deep fry.
Method:
1).Wash and soak the dals for 2 hrs. Drain the water completely and make a course and firm paste.
2).Add all the ingredients except oil and rice flour. Mix well, add a tablesp of hot oil and rice flour, gently blend again.
3).Make thin rounds on a polythene cover, put a hole in the centre and fry under medium heat till they turn nice golden in colour.
4).Remove them on to a paper napkin to absorb excess oil if any.
5).Serve this very healthy greens snack along with tea or in break fast
