Purple yam or elephant yam or Kanda is a bit neglected vegetable. We can prepare number of delicious dishes with it including pickles. Here Iam preparing simple masala curry with it which can be served as side dish for rice and break fast items like chapathi/ poori etc.
Ingredients:
Yam/ Elephant yam/ Kanda ( in Telugu ) – 250Gms,
Onion – 1, medium, chopped fine,
Green chillies – 2, cut into pieces,
Red chilli powder – 1/2 Tsp,
Haldi – 1/8 Tsp,
Salt,
Peeled and crushed garlic cloves – 5,
Jeera – 1/4 Tsp,
Dhania powder – 1 Tablesp,
Curry leaves – 1 small sprig, chopped,
Chopped coriander leaves – 1 Tablesp,
Oil – 3 Tablesp,
Method:
1).Peel, wash and cut yam into 1/2″ cubes. Keep them aside.
2).Heat oil in cooker, add jeera, curry leaves, garlic, chillies and onion. Fry till onion turns pink and soft.
3).Add dhania powder, chilli powder, salt, haldi and Kanda pieces. Stir well and add 200 ml water. Close the lid and pressure cook for 3 whistles. Let the steam escape.
4).Open the cooker and check if there is any excess liquid. If necessary keep the cooker on flame for another 2to 3 minutes. Sprinkle coriander and remove.
5).Serve this side dish with rice preparations/ chapathi/ Roti.
Tip:
You can drizzle few drops of lemon juice on curry for variation.
