Gulab jamun with Sweet Potato

This yummy all time favourite sweet is prepared with sweet potato/ chilakada dumpa in Telugu , sakar kandi in Hindi/ madhura kizhangu in Tamil . No need to add mawa and it is very easy to prepare .
Sweet potato. – 200 Gms,( washed, boiled, peeled and grated ),
Milk powder – 3 Tablesp,
Baking soda – 1/8 Tsp,,
All purpose flour or maida – 2 Tablesp,
Sugar for syrup – 200 Gms, ( little more ),
Cardamom powder – 1/4 Tsp,
Pistachio slivers – 2 Tsp,
Saffron – optional ,
Milk for dough ,
1).You can cook the potato in cooker or usual say in a bowl or in microwave oven. I cooked them in a microwave oven under high power for 6 minutes.
2).Cooked potatoes are peeled and grated to get smooth pulp. Add milk powder, flour, baking soda and cardamom powder. Mix well and add few tsp of milk to prepare a smooth dough. Keep it aside for 10 minutes.
3).Mean while prepare sugar syrup. No need to get one string consistency. Remove before that stage and add a few drops of lemon juice to the syrup to prevent cristallisation. Keep it warm.
4).knead the dough lightly once and make small balls out of it. Deep fry them under low heat till light golden brown in colour on all sides.
5).Remove and drop them in warm sugar syrup. Let them soak for 3 to 4 hrs. Garnish with pistachio slivers and serve with some syrup.
A).If potato contains fibrous material simply pass it in a seive to get smooth paste.
