Pheni – Sweet pheni and sugar free pheni.

Pheni/ peni is a crispy. Multi layered, juicy sweet usually prepared with all purpose flour and tastes like badusha. Here iam using wheat flour with little ,finely ground suji.
Ingredients:
Whole wheat flour – 200 Gms,
Suji ( finely ground )- 2 Tablesp,
Sugar – 300 Gms,
Corn flour/ rice flour/ flour – for dusting while making dough rounds and for ghee paste,
Cardamom powder – 1/2 Tsp,
Melted ghee – 3 Tablesp,
Oil – For deep frying and 2 tablesp of uhot oil for dough,
Pinch of salt,
Method:
1).A smooth but semi tight dough is prepared with wheat flour, suji, salt, and 2 tablesp of hot oil. Cover and keep it aside for 1/2 hr.
2).Prepare 1 string sugar syrup and keep it aside after adding cardamom powder. Prepare paste with ghee and rice flourish,
3).Divide the dough into lemon size balls and make thin layered rounds.Smear ghee paste over rounds. Arrange the rounds one over the other using all of them.
4).Fold the ghee smeared rotis into a tight log. Cut it into 1/2″ bits and make a round with gentle stroke with belan.
5).Deep fry the rounds under low medium heat till light golden in colour. Drop them in warm syrup for 20 sec. and remove them on to a plate.
6).Keep some fried pheni separate to dust them with sugar free powder ( preferably Sucralose ).These are for diabetics and dieters.
Tip:
You can avoid sugar syrup and dust the pheni with powdered sugar and serve.
