Ingredients Left over or fresh idlis – 4, Oil – 2 Tablesp, Salt – 2 Pinches, Fried jeera powder – 1/4 Tsp, Red chilli flakes – 1/4 Tsp, Haldi – A pinch, Onion – 1, medium , sliced fine, Green chilli – 1, chopped fine, Boiled fresh green peas – 2 Tablesp, ( optional ), Ginger – 1/4″ piece, chopped fine, Curry leaves – 2, chopped fine, Chopped coriander leaves – 1 Tablesp, Tomato ketchup – 1 Tablesp, Cashew bits – 2 Tsp, ( optional ), Method: 1).Cut idlis into 1″ cubes. Keep them aside. 2).Heat oil, add jeera powder, ( cashew bits if using ) curry leaves, chilli pieces, onion, ginger and fry for 1/2 minute till onion turns pink. 3).Add haldi, salt, chilli flakes , boiled peas and stir well . Add tomato ketchup, mix well and cook for few seconds. 4).Add idli cubes and gently toss ( intermittently ) for 1/2 minute so that each and every cube is coated with masalas.
