This aappam , a break fast dish is popular and favourite item in Kerala cuisine.
This is a quick version of preparing aappam with yeast and left over rice.
Ingredients:
Cooked rice ( fresh or left over ) – 1 cup ( Measuring cups ),
Raw rice – 1 Cup ,heaped,( Picked, washed, and soaked for 2 hrs ),
Salt,
Dry yeast – 1/2 Tsp,
Sugar – 1 Tsp,
Dessicated coconut powder – 4 Tablesp,( Soaked in little water ),
Method:
1).Grind cooked rice, soaked rice, yeast, sugar and coconut powder into a fine
thick batter adding water little by little .
2).Keep it in a big bowl ( to avoid overflowing ) for fermentation for 3 to 4 hrs.
3).After 4 hrs take the required amount of batter and prepare a bit thinner aappam batter by adding water.
4).Heat an aappam chatti and wipe with a drop of oil.Pour a ladleful of batter and rotate the pan so that the batter coats the pan resulting in thick central portion with lacy edges. Cover with lid and cook ( Drizzle little oil if desired ) for 2 minutes.
5).Remove the lid and flip aappam on to a plate. Repeat preparing remaining aappams .Serve hot with veg or non veg kurma / Sambhar.
Tip:
It is delicious even with peanut chutney which is my preference.
