This is very simple and easy comfort food recipe with very mild spiciness prepared with healthy amaranthus greens ( Thotakoora in Telugu ). It is a perfect dish especially during convalcence – with plain hot rice and little desi ghee. You can increase the spiciness by adding green chillies and chilli powder for others.
Ingredients
Amaranthus leaves – 200 Gms,
Onion – 1 medium, sliced fine,
Jeera – 1/2 Tsp,
Channa dal – 1 Tsp,
Curry leaves – few,
Oil – 1 Tablesp,
Peeled garlic cloves – 6,
Red chilli – 3, broken into pieces,
Mustard seeds – 1/4 Tsp,
Chopped coriander – 2 Tsp,
Method:
1).Wash, pick,chop and boil greens with very little water ,salt and haldi for 3 to 4 minutes.It sould not be mashed .Gently squeeze out water and keep it aside.
2).Heat oil, add mustard, urad dal, Channa dal, red chilli, garlic cloves and curry leaves. Fry till mustard splutters and dals change colour,
3).Add onion pieces and fry till they turn soft.Add cooked greens and mix well . Keep it for 2 minutes till the curry is dry with out any moisture. Garnsh with coriander leaves.
Tip:
You can sprinkle a tablesp of dessicated coconut powder.
