Crispy pudina pakoda

This tempting pakoda snack is prepared with besan and healthy pudina leaves.
Ingredients:
Besan – 125 Gms,
Pudina leaves – 25 to 30 leaves, washed, picked and chopped,
Onion – 2, medium, sliced fine,
Rice flour – 2 Tablesp,
Green chilies – 4,chopped fine,
Ginger – 1/2 ” piece, chopped fine,
Pound 2 cloves, 1/2 “cinnamon, 6 peeled garlic cloves into course powder,
Curry leaves – 6 to 8 ,chopped fine,
Chopped coriander – 1 Tablesp,
Ajwain – 1/4 Tsp,
Salt,
Oil to deep fry.
Baking soda – 1/8 Tsp,
Method:
1).Mix all ingredients except besan, rice flour and oil. Gently crush the ingredients with fingers so that the onion and greens release moisture.
2).Now add besan, riceflour and 2 tablesp of hot oil. Mix well and prepare a tight dough
using minimum water.
3).Put small portions into hot oil and fry till light golden in colour. Remove the pakoda on to a tissue paper to absorb excess oil if any.
4).Serve them with tea.
Tip:
You can add cashew / ground nutsu to give extra crunch.
