Aloo Burfi

This simple aloo / potao sweet is very easy and quick to prepare .
Ingredients:
Potato – 150 Gms, washed, boiled, peeled, and grated fine,
All purpose flour / maida – 150 Gms,
Sugar – 250 Gms,
Ghee – 4 Tablesp,
Cashew nut bits – 2 Tablesp,
Pistachio bits – 2 Tsp,
Elachi powder – 1/2 Tsp,
Cloves – 3,
Dessicated coconut powder – 2 Tablesp,
Methodin i:
1).Fry the potato gratings in 2 Tablesp of ghee till it becomes light pink in colour. Remove it in to a plate.
2).In the same pan add remaining ghee and fry the flour till nice aroma comes with light change in colour. Mix this with potato gratings.
3).Prepare a little thick syrup with sugar and 100 ml water.Add cloves while boiling.
4).Remove cloves . Add potato mixture and coconut powder to sugar syrup. Cook under low heat till the mixture becomes into a mass leaving the sides of pan.
5).Sprinkle cardamom powder and mix once.
6).Pour the burfi into a greased tray. Garnish with nuts and raisins Level it and cut it into desired shapes when still warm.
