These crispy and fibre rich fritters are prepared with amaranthus ( thota koora in Telugu ) greens. These greens are rich in antioxidants, iron, vitamins , minerals and lot more.
Ingredients:
Channa dal -’75 Gms ( soaked for 2 hrs ),
Urad dal – 1 Tablesp ( soaked along with Channa dal ),
Rice flour – 2 Tablesp,
Salt,
Amaranthus leaves – A medium bundle ( approx.100 Gms ) picked, cleaned and chopped fine,
Onion – 2 medium, sliced fine,
Green chillies – 4 ,chopped fine,
Ginger grated – 1/2 Tsp,
Chopped curry leaves – 1 Tablesp,
Chopped coriander – 1 Tablesp,
Sompu – 2 Pinches,
Cloves – 2, cinnamon – 1/2″ piece, and dry fried dhania seeds – 2 Tsp ( crush them into course powder ),
Oil to deep fry,
Method:
1). Grind drained dals into a cource paste. Squeeze out water from amaranthus.Mix all the ingredients into a tight dough.
2).Add a tablesp of hot oil to the dough.
3).Drop small portions of dough into hot oil and fry under low medium flame till the fritters turn light golden in colour.
4).Remove them on to a plate with a kitchen paper, to absorb excess oil if any.
5).Serve them as tea time snack.
