This nutritious recipe is very easy to prepare with left over bread and healthy palak.
Ingredients:
Bread slices – 6, cut each into 8 cubes and toasted in a tsp of ghee or butter,
Salt,
Spinach / palak – 2 bunches cleaned throughly ,leaves,tender stalks picked and kept aside,
Coriander leaves – 2 bunches cleaned throughly and chopped roughly,
Onion – 1 medium, cut into 2,
Ginger garlic paste – 1/2 Tsp,
Green chillies – 4 ,
Tomato puree – 2 Tablesp,
Dhania powder – 1 Tablesp,
Jeera powder – 1/2 Tsp,
Garam masala – 1/2 Tsp,
Oil / ghee – 3 Tablesp,
Cashew bits for garnishing – 1 Tablesp,( optional ).
Method:
1).Blanch palak in boiling water for 2 minutes, remove and drop in chilled water for a min.
2).Drain palak and grind it with coriander, green chillies,and onion into a fine paste.
3).Heat oil, add ground paste and ginger garlic paste, Cook till raw smell goes and oil is seen at the edges.
4).Add tomato puree and cook for a minute.
5).Add dhania powder, jeera powder, salt and cook for few seconds.
6).Add 200 ml of hot water and cook till gravy turns thick sauce like.
7).Add garam masala and mix well.Remove from flame. Garnish with nuts.
8).Serve the toasted bread croutons with delicious hot green sauce.
Tip:
You can use methi leaves in place of palak if you desire.But do not blanch them.Sprinkle some salt over cleaned methi leaves and squeeze out water after 1/2 hr to remove bitterness.
