This healthy and delactable plum cake is prepared with whole wheat flour ( i used Ashirwad atta ) without alcohol, without condensed milk.
Ingredients:
Whole wheat flour – 3/4 Cup,(about 100gms ),
All purpose flour – 30 Gms, ( little flour for dusting nuts used for garnishing ),
Milk powder – 2 Tablesp,
Powdered sugar – 1/4 Cup,
Sugar – 3 Tablesp for caramel ,
Orange zest – 1 Tsp,
Plum cake masala powder with 2 cloves, 1/3″ piece of cinnamon, tiny piece of nutmeg,
Nuts broken into small pieces – cashew nuts, almonds, walnuts and dates 2 tsp each,
Raisins and tutti frutti – 1 tablesp each,
Milk – 100 ml,
Vinegar – 2 Tsp,
Oil – 3 Tablesp,
Method:
1).Preheat O.T.G for 10 minutes at 180 degree C .
2).Add vinegar to warm milk ,mix and keep it aside.Grease a cake mould and put a baking sheet in it.Keep it aside.
3).Prepare caramel syrup with sugar kept reserved for it. Heat the sugar granules.Let the sugar dissolve and turn into nice brown coloured syrup with bubbles. At this stage add 5 tablesp of water and remove from flame .Stir well and again keep it on fire for 1 minute and remove. Caramel is ready .Drop all the nuts , dry fruits ,Orange zest in this solution.This step is to be done 3 to 4 hrs before cake preparation .
4).Add powder sugar, masala powder,oil and milk ( mixed with vinegar ).Stir well.
5).Seive wheat flour, all purpose flour, milk powder, baking powder, baking soda into the nuts mixture.
6).Blend all the ingredients gently by cut and fold method.
7).Pour this batter in the greased tray with baking sheet and tap it 2 to 3 times to let out trapped air .Sprinkle the dusted nuts over the batter.
8).Bake it for 20 minutes at 180 degree C.Check with a tooth pick,if it comes out clean remove from oven.If not continue baking for another 5 minutes.
9).let the cake cool.Transfer it into a tray or plate . Cut it into pieces and serve.
Tip:
A).My oven is Black + Decker and i used alluminium foil tray for baking.B). When there is no time , soak the nuts and dry fruits in hot caramel syrup at least for 1 hour.
