This mildly spicy curry ( Iguru in Telugu ) is very easy to prepare with minimum ingredients.It is generally very much liked by kids .
Ingredients :
Arbi/ Colocasia/ Chama dumpa – 200 Gms, washed, boiled, peeled, and cut into 1″ to 1 and 1/2″ cubes.
Onion – 1, medium ,sliced fine,
Green chilli 1, chopped fine,
Red chilli powder – 1/2 Tsp,
Haldi – 2 pinches,
Garlic cloves – 5, peeled and crushed roughly,
Curry leaves – few,
Dhania powder – 1 Tablesp ( dhania – dry fried and powdered ),
Oil – 3 Tablesp,
Jeera – 2 pinches,
Salt,
Method:
1).Heat oil, add jeera, curry leaves and fry for few seconds.Add onion, chilli pieces and fry till onion becomes soft.
2).Add arbi pieces and fry for 2 minutes.Add red chilli powder, haldi and salt.Stir gently.
3).Fry again for 2 minutes.Sprinkle dhania powder and crushed garlic over the arbi pieces.
4).Add a Tablesp of water ,mix gently and cook for a minute with lid on.
5).Sprinkle coriander leaves and remove from fire.
6).Serve as side dish .
Tip:
Instead of boiling the arbi you can microwave them .But don’t forget to give a small nick on each arbi to avoid busting and also keep a small microwave safe katori with little water.(Refer my microwave tips ).
