This kajjikaya ( in Telugu )/ gujiya is a famous sweet prepared with different stuffings in different parts of India. Here iam using coconut gratings with jaggery as stuffing. . This sweet is very easy to prepare and keeps fresh for 15 days.
Ingredients:
Wheat flour – 1/2 Cup,
All purpose flour or maida – 1/2 Cup,
Pinch of salt,
Jaggery powder – 3/4 Cup,
Dry coconut gratings / Desiccated coconut powder – 1 Cup,
Cardamom powder – 1/4 Tsp,
Cashew nut bits – 2 Tablespoons,
Oil to deep fry,
Measuring cups.
Method:
1).Prepare a bit stiff dough with both the flours, salt and 2 tablesps of nhot oil. Keep it covered with a damp cloth for 20 min.
2).Lightly dry fry the coconut gratings under low heat. Add jaggery and elachi Powder. Add cashew bits,mix well, keep it on fire for a minute and remove.
3).Divide the dough into small lime size balls and make round puris.
4).Put the round into gujia mould and fill up with a spoon full of stuffing. Close the mould tightly. Open and remove the gujia for frying,
5).Prepare all gujiya and deep fry them till light golden in colour. Remove them on to a kitchen napkin.
6).If mould is not available you can stuff the puri with filling , moisten the edges and close. Fry them as usual.
Tip:
You can make rounds in puri press to make the process quick.
