This is a light breakfast item / teatime snack prepared using puffed rice .It can easily be prepared even by kids.
Ingredients:
Puffed rice/ Murmur/ Borugulu in Telugu – 200 Gms,washed under tap to remove dust particles,
Onion – 1,medium, chopped fine,
Green chilli – 2,chopped fine,
Red chilli – 1,broken into pieces,
Jeera – 1/2 Tsp,
Mustard seeds – 1/4 Tsp,
Urad dal – 1/4 Tsp,
Channa dal – 1 Tsp,
Ground nuts – 1 Tablesp,dry fried,
Cashew nuts bits – 2 Tsp,
Curry leaves – few,
Coriander leaves – 2 Tsp,chopped fine,
Tomato – 1 small, chopped fine after removing seeds,
Potato – 1,small, cut into tiny cubes after peeling,
Salt,
Lime juice – 2 Tsp,
Haldi – A pinch,
Oil- 2 Tablesp or less,
Method:
1).Heat oil ,add mustard seeds, dals, jeera, curry leaves along with red chilli and fry till mustard splutters.
2).Add green chilli, onion and fry for few seconds.Add tomato and potato pieces and cover for a minute to cook.
3).Add haldi and nuts along with very little salt.Mix well and transfer the drained puffed rice into pan with tadka. Mix well and remove after 1/2 minute.
4).Sprinkle little lime juice and chopped coriander over prepared Uggani.Lightly mix and serve.No need of chutney or any accompaniment.
Tip:
a).It can easily and quickly be prepared and very light on stomach,
b).Do not keep the puffed rice in water for long .Just rinse under tap in collander , squeeze out water immediately and keep aside till use.
