This simple snack / break fast dish is prepared with dark purple rice called puttu rice (in Telugu and Kavuni rice in Tamil). It is easily available in Tamil nadu and Kerala. But in Andhra it is a rare commodity and available only in very few Superbazaars. .It is a fibre rich rice with lot of antioxidants which are very beneficial to our body. My mother used to prepare this simple yummy dish which everyone used to relish.There are other preparations using puttu rice powder, speciality dishes from Kerala and Tamil nadu.
Ingredients:
Puttu rice – 250 Gms,
Sugar or jaggery – 50 Gms,(or little more ),
Cardamom powder from 4 cardamoms,
Raisins – 1 Tablespoon,
Salt – A pinch,
Fresh coconut gratings – 3 Tablespoon,
Cashew nuts bits – 1 Tablespoon, dry fried ( optional),
Method:
1).Wash and soak rice for an hour in water.
2).Pour 200 ml water in pressure cooker ( preferably 3 litres cooker) . Keep the drained rice with a pinch of salt in a long steel container and add just enough water to immerse rice. Place the container in the centre of cooker with a lid and cook for 3 whistles.
3).Let the steam escape. Remove the lid and place the cooked puttu rice on a plate. Add sugar, coconut gratings ,cashew and cardamom powder.Mix well and serve warm .
Tip:
You can adjust the sugar / Jaggery quantity according to your taste.This yummy and chewvy sweet rice is a sure hit with kids.For diabetics you can sprinkle little sugar-free natura powder instead of sugar and serve .
