Drum stick leaves relish or Munagaku thalimpu ( in Telugu ) is a very healthy dish with lot of medicinal benefits and it is tasty too.
Ingredients:
Tender drum stick leaves – 150 Gms,( picked and washed in plenty of water.No need to chop as the leaves are tender),
Onion – 1,medium, cut into small pieces,
Green chilli – 2,chopped fine,
Red chilli powder – 1/2 TSP,
Salt,
Jeera – 1/2 TSP,
Urad dal – 1/2 TSP,
Red chilli – 1,broken into pieces,
Peeled and crushed garlic cloves – 6,
Curry leaves – few,
Mustard seeds – 1/2 TSP,
Ground nuts powder – 2 Tablesp,( ground nuts dry fried and powdered along with little jeera,2 garlic cloves ) .
Oil – 2 Tablesp,
Chopped coriander leaves – 1 Tablesp,
Method:
1).Put the drum stick leaves in a micro safe bowl with little water and salt. Cook the leaves under micro high for 4 minutes.
2).Remove and squeeze out the water from the leaves and keep it aside.
3).Heat oil in a pan, prepare thadka with mustard seeds ,jeera, urad dal ,red chilli,garlic and curry leaves.Fry till mustard splutters,add onion and green chilli ,fry till onion turns pink and soft.Add chilli powder,haldi and stir well.
4).Add drum stick leaves ,mix well and keep it covered to cook for 2 minutes .
5).Remove the lid and sprinkle ground nut powder and chopped coriander leaves.Mix thoroughly and remove.
7).Serve this fibre rich tasty relish as side dish for hot plain rice /Chapathi/ poori.
Tip:
A).Prepare paratha with this as stuffing.
B).You can cook the leaves in normal way on fire instead of using microwave.
C).You can directly add the washed leaves to thadka and cook.But little raw smell will be there which some may not like.Hence It is your choice.
D).You can add a tablesp of dessicated coconut powder along with ground nut powder.
