Dum Arbi / Chama dumpa Dum

Ingredients:
Colocacia / Arbi / Chama dumpa ( Telugu ) – 300 Gms,( preferably small rounded variety ).
Dhania seeds – 1 Tablesp,
Jeera – 1/2 TSP,
Ginger – 1/2″ piece,
Cardamom – 2,
Cloves – 2,
Cinnamon – 2,small pieces,
Chopped coriander – 1 Tablesp,
Pepper corn – 6 to 8,
Haldi – 2 pinches,
Green chilli – 4,
Thick fresh curd – 2 Tablesp,
Salt,
Oil – 3 Tablesp,
Cashew nut bits – 1/2 Tablesp,(optional,
Sugar – A pinch,
Garam masala – 1/4 TSP.
Method :
1).Wash arbi thoroughly to remove sand and parboil them with their skin.
2).Remove the skin and put one or two pricks with fine screwer.Keep them aside.
3).Dry fry dhania, pepper corn and grind them with chilli along with ginger into a smooth paste.
4).Mix curd,haldi and salt with the above masala.Marinate the arbi with the curd mix and keep it aside for 1/2 hr.
5).Heat oil in a thick bottomed kadai ,add jeera,cloves,cardamom,cinnamon and.Fry for few seconds and add the marinated arbi to it.Mix well.
6).Fry the Arbi for 2 to 3 minutes and cover the kadai with a lid .Pour little water on the lid and cook the arbi slowly under low heat till tender.Drizzle little water if necessary.
7).Sprinkle garam masala powder and mix well. Garnish with chopped coriander and fried cashew bits .Remove and serve hot with any rice preparation.
Tip:
If small arbi are not available you can use larger variety by cutting them into 1 and 1/2″ to 2″ cubes (after peeling the skin).
