This is a very delicious kheer with sweet potato.It can easily and quickly be prepared.
Ingredients:
Sweet potato – 2,medium,approximately about 100 Gms,
Sugar – 2 Tablesp ,
Cardamom powder – 1/4 TSP,
Almond ,pistachio slivers – each 1 Tsp ,
Raisins – 1 TSP
Normal toned milk – 600 ml,
Desi ghee – 1Tablesp,
Method:
1).wash ,peel and finely grate potato.Keep it aside.
2).Heat ghee in a non stick pan and fry the potato gratings till they are soft and a bit transparent.
3).Add 300 ml of milk and sugar.Stir continuously till gratings are well blended with little thickened milk.
4).Add cardamom powder along with remaining milk and mix well.Sprinkle nuts and remove..
5).Serve this kheer as dessert .
Tip:
Replace sugar with sugar free powder ( preferably sucralose ) for diabetics and dieters.As sweet potato is fibre rich with low glycemic index it can be served for diabetics in moderate quantities.
