This is a very simple snack /starter recipe ,even a school going child can prepare it easily.The basic batter is same but the vegetables / fruits / nuts used are different.Here iam using some common vegetables.Some like to enjoy fluffy and soft type of bajjis,some like them crispy.Rice flour is added to besan to get that crispyness.
Ingredients:
Besan / chick pea flour / gram flour – 300 Gms,
Vegetables – Brinjal-1, green chillies-6, potato-medium,1,onion- medium,1,carrot – 1,cauliflower – 6 -8 flowrettes,
Salt,
Green chilli paste – 1/2 TSP,
Baking soda – 1/8 TSP,
Ajwain – 1/4 Tsp,
Peeled and crushed garlic cloves – 2,
Rice flour – 2 Tablesp,( optional),
Finely chopped coriander leaves – 1 Tablesp,
Oil to deep fry,
Method:
1).Cut brinjal vertically into long pieces and keep them in salted water.Remove seeds from chillies and keep them aside.cut onion and potato into roundels.keep the potato in water.Cut carrot into thin fingers.Clean cauliflower and separate into small flowrettes.Blanch them in hot water.
2).Make batter with besan and other ingredients except vegetables.Batter should not be very thin or very thick, it should coat the pieces nicely.
3).Dip each piece in the besan batter and drop into hot oil .Fry them under medium flame till light golden in colour.Remove them on to a kitchen tissue.
4).Serve them with tomato sauce/ any chutney along with tomato and onion rings.
