Egg curry

This curry is like thalimpu prepared with boiled eggs and lot of onions. It can be served with plain rice as side dish/ chapathi/ poori.
Ingredients:
Boiled eggs – 4,
Onions – medium ,2 sliced thin,
Green chilli – 4 ,chopped fine,
Jeera – A pinch,
Haldi – A pinch,
Salt,
Oil – 2 Tablesp,
Dhania powder – 1/2 Tsp,seeds dry fried and powdered,
Curry leaves – 5 to 6,chopped fine,
Chopped Coriander leaves – 1Tsp,
Method:
1).Remove shell and cut each egg carefully into 4 to 6 pieces and keep aside,
2).Heat oil ,add onions, haldi ,chilli,jeera and curry leaves .Fry till onions become soft and translucent.
3).Add salt ,dhania powder,and stir once .Add eggs and fry them under low heat mixing gently with a fork so that egg pieces are well coated with spices.
4).Sprinkle coriander and remove.Serve as side dish with plain rice/ poori/ chapatti.
Tip:
Serve it as chat along with tomato pieces ,boiled vegetables like potatos,peas etc.Reduce the quantity of onion pieces (in the step 2) and use raw onion pieces for the chat along with some crushed papdi.
