These chicken cutlets are easy to prepare and a very good starter recipe.
Ingredients,:
Boneless chicken – 200 Gms,
Channa dal – 30 Gms,soaked in water for 1/2 hr,
Onion – 1,medium,chopped roughly,
Red chilli powder – 3/4 Tsp,
Ginger garlic paste – 1/4 Tsp,
Garam masala – 1/4 Tsp,
Dhania powder – 1/2 Tsp,
Egg whites – from 2 eggs,( optional),
Salt,
Oil – 2 to 3 Tablesp,
Chopped coriander – 1 Tablesp,
Corn flour – 2 Tablesp,
Method:
1).Wash and cook chicken pieces with all the ingredients ( except oil, egg white and corn flour) under low fire till chicken and dal are tender. Sprinkle little water If nessessary while cooking.But ultimately there should not be any moisture left in the chicken mix.
2).Prepare cornflour solution with 3 tablesp of water and keep it aside,
3).Grind the chicken mix to a smooth but firm paste.check salt.
4).Prepare round cutlets out of the chicken mix and keep them ready.
5).Heat non stick fry pan or grill pan.Sprinkle few drops of oil on pan.Dip the cutlets in cornflour solution and gently put them on pan.
6).Drizzle little oil over the cutlets and fry them till both sides are golden in colour.
7).Remove and serve them as starter or snack .
Tip:
a).If using egg white ,dip the cutlets in egg white and fry them on pan till both the sides are golden in colour.
b).You can use pressure cooker ( preferably 3 litres cooker )for cooking ( or steaming) the chicken (as I did for kheema cutlets ) by keeping the chicken in a tall steel container with all the ( mentioned )ingredients.Pour sufficient water in the cooker,cover the steel container with small lid and cook for 3 whistles . Proceed as per the remaining steps.
