Chutney stuffed karela fry in Microwave oven

This is a very healthy and tasty fry recipe using chutney as stuffing for karela/ bitter gourd/ kakara kaya (in Telugu) prepared in microwave oven.
Ingredients:
Small to medium size karela – 6 to 8,
Salt,
For stuffing:
Chopped coriander leaves – 6 Tablesp,
Chopped mint leaves – 2 Tablesp,
Fresh coconut grated – 2 Tablesp,
Jeera – 1/2 Tsp,
Peeled garlic cloves – 4,
Dhania powder – 1/2 Tsp,
Oil – 3 to 4 Tsp,
Juice from 1 small lemon,
Salt
Method:
1).Grind all ingredients for stuffing (except oil )into a course paste.Keep it aside.
2).Lightly scrape karela and give a slit on one side.Rub little salt and leave it for 1 hr.
3).After 1 hr,wash, squeeze lightly and Put them in boiling water for 2 minutes.(with little salt).
4).Remove and squeeze out water completely.
5).Stuff each karela with ground paste and arrange them in a microwave safe glass tray.Spread remaining masala ( if any )over them.
6).Sprinkle oil over the karela and microhigh them for 15 minutes.Turn them 2 to 3 times in between.
7).Check after 15 minutes and if necessary micro high them for another 5 min.
8).Serve them as side dish.
Tip:
a).Adjust the timings of microwaving according to your oven power levels.
b).Do not remove seeds (especially when they are tender) while stuffing.They give nice crunchy taste while eating.You can tie a thread around karela if you think that it is necessary.
