This corn flour halwa / Bombay halwa is prepared with jaggery instead of sugar.
Ingredients
Corn flour – 125 Gms,
Jaggery Powder – 250 Gms,
Cardamum powder – 1/2 Tsp,
Yellow or orange food colour – Few drops,
Nuts like almond slivers,cashew bits,pistha etc about 1 Tablesp,
Water – 400 Ml,
Ghee – 100 Gms
Method:
1).Make a solution of corn flour with 125 Ml of water.Add food colour and keep it aside,
2).Mix jaggery with remaining water and let it boil till we get 1 string consistancy.Add cardamum powder.
3).Now quickly add the corn flour solution and stir continuously.When the mixture is becoming thick ,add ghee little by little till all the ghee is absorbed by the mixture.
4).When the mixture becomes thick and leaves the sides of the pan, add 1/2 Tablesp of nuts to halwa and mix well.
5).Now pour the mixture in a greased plate .Garnish with remaining nuts and cut into desired shapes when cool.
Tip:
a).Strain the jaggery solution if you desire.
b).You can substitute 1/2 the quantity of ghee with oil but ghee is preferable.
