This healthy snack is prepared with amaranth leaves in Air fryer with minimum oil.
Ingredients:
Amaranth leaves (Thotakoora in Telugu) – 100 Gms (1bundle),
Onion – 1,cut into small pieces,
Green chilli – 3,chopped fine,
Salt,
Garam masala – 1/2 Tsp,
Oil – 2 Tsp,
Chopped coriander – 1Tablesp,
Sompu – A pinch,
Finely chopped ginger – 1/4 Tsp,
Moong dal (with out husk) – 2 Tablesp,soaked for 2 hrs,
Boiled and mashed potato – 2 ,medium.
Lime juice – few drops(optional).
Method:
1).Clean,wash amaranth leaves thoroughly,and chop it fine.Squeeze out moisture from chopped amaranth and keep it aside,
2).Drain and grind moong dal into a course paste with out adding water.
3).Mix all the ingredients including ground dal to prepare a tight but pliable dough.
4).Preheat air fryer for 4 minutes at 200 degree C.
5).Grease a nonstick / alluminium pan/butter paper and arrange the cutlets on it.Brush them with oil.
6).Air fry the cutlets for 15 to 20 minutes at 180 degree C.Check them 2 to 3 times in between and shake the pan.
7).Serve these healthy snack as an appetizer/ evening snack along with tea.
Tip:
Instead of moong dal paste you can substitute it with fried Channa dal powder.you can include small bits of nuts like ground nuts and cashew etc.in the dough.
