Eggs in Onion Masala Gravy.
This is an excellent side dish for any type of Roti/chapathi/Rice preparations.
Ingredients:
Eggs-6
Onions-3,Medium (each cut into two)
Green Chillies-2
Dhania powder-1Tablesp
Jeera Powder-1/2Tsp
Ginger-1/2″piece
Peeled Garlic cloves-6to8
Cloves-4
Cardamom-1
Cinnamon-1/2″Pieces-2
Bay Leaf-1
Red chilli powder-1Tsp
Haldi-1/8Tsp
Coconut paste/Dessicated coconut powder-1Tablesp
Salt
Oil-3Tablesp
Chopped Coriander-2Tablesp
Sompu-A pinch(optional)
Method:
1).Boil eggs and remove shells.Give 1 or2 light cuts and keep them aside.
2).Microhigh onion,chillies(give a prick on them),garlic and ginger for 3 min in a microsafe bowl.
3).Grind them in a mixie along with dhania powder,chilli powder,haldi,jeera powder,sompu,2 cloves,1piece of cinnamon and coriander leaves, into a smooth paste without adding water
4).Heat 1/2tsp of oil in a non stick kadai,lightly fry the eggs. Remove and keep them aside.
5).Add remaining oil to the kadai add bay leaf,remaining cloves, cardamam,cinnamon bit and fry for a sec.
6).Add prepared onion masala along with salt and fry till raw smell goes and oil is visible at the edges.Add 50ml of water,coconut paste, and let it boil for a min. under low heat.
7).Now add eggs and gently stir in the masala.Cover, keep for a min under low heat and remove.
8).Garnish with chopped coriander(optional).Serve this masala curry with chapathi/poori/rice preparations.
TiP:
You can dry fry onion and chillies etc instead of putting them in microwave oven .Either way we can reduce the quantity of oil for preparing the curry.
