Sweet Potato Kheer for diabetics/dieters.
Sweet potato kheer can easily be prepared in a jiffy with Sugar free powder-Sucralose.This desert is for diabetics and diaters
Ingredients:
Sweet Potato-200Gms
Sugar Free Powder(Sucralose)- 1Tsp (or a little more)
Cardamom powder-1/4Tsp
Black Raisins-2Tablesp
Almonds-8(soak 6 almonds in water,remove skin and make a paste.remaining 2 for slivers).
Black Raisins-1/2Tablesp
Melon Seeds-1Tsp(fry them in a drop of ghee along with raisins)
Ghee-1Tablesp
Low Fat Milk-500Ml
Saffron-Few strands .Mix with little milk and keep it aside(optional).
Method:
1).Wash,peel and grate the potato fine.
2).Fry this in ghee on a non stick pan,till it turns light golden in colour with disappearance of raw smell.Remove when the mass leaves the sides of pan
3).Meanwhile thicken the milk to 2/3rd of its quantity.Add fried potato along with sucralose and stir well till well blended.
4).Add almond paste and cardamom powder.Mix well and Keep on fire for a min.Add raisins,melon seeds and remove from fire.
5).Garnish with almond slivers and saffron milk.
6).This very tasty and delicious desert is for diabetics and dieters.
Tips:
You can always adjust the quantity of sugar free powder according to your taste and also the sweetness of potato
Diabetics can consume sweet potato in moderate amounts as glycemic index of sweet potato is low.
